Crafted by the House of Patriarche in Beaune, the base wines are carefully chosen and assembled before a liqueur de tirage (made of sugar, yeast and wine) is incorporated triggering the second fermentation and foam creation. Over several months, the wine gradually develops its aromas and fine, light bubbles.
