The'No. EC403' was fermented through the historic 1888 Gravity Cellar. Built into the hillside on a series of terraces, gravityguides the flow of fruit down through the winery to deliver gentle extraction of colour, flavour and tannin. All three varieties were matured separately in oak–the Grenache in well-seasoned foudres and puncheons, the Shiraz inhogsheads (30% new, 70% seasoned) and the Mataro in seasoned French oak hogsheads.

Tasting notes
Medium deep crimson. Dark plum, mulberry aromas with graphite herb garden, hint ginger notes. Well concentrated and buoyant with lovely dark plum, dark cherry fruits, plentiful assertive firm chalky tannins, underlying roasted walnut graphite notes and long fresh acidity.

Very deep, bold, bright purple colour, with a lovely fresh, clean, fragrant nose featuring floral notes and a whisper of Barossa ironstone-graphite. Full-bodied with tremendously deep flavour, rich and concentrated but beautifully balanced and harmonious. Cranberries. The tannins are fine, firm and abundant, and run the full length of the palate.
