Aviation Gin is a small batch New Western Style Dry Gin. It is thought to be the first true partnership between distiller and bartender. The creator of Aviation Gin and leading US mixologist Ryan Magarian, describes the Gin as a “botanical democracy” of juniper, cardamom, coriander, lavender, anise seed, sarsaparilla, and dried orange peel. Aviation has the delicacy of a London dry gin, yet the weight of a Dutch genever.
Tasting notes

A sweet star anise top note descends the liquorice octave to lower pitches of fennel and sarsaparilla over some dill, caraway and rye bread notes. Soft, glycerous entry leads into a broad, semi sweet rye, caraway, anise flavour profile with citrus zest adding freshness. Excellent balance. A white pepper attack emerges on the finish leading into a refreshing sarsaparilla and caraway aftertaste of moderate persistence. The slightly higher alcohol (42%) ups the intensity making this a compelling alternative buy to traditional Genevers.
