Cheese lovers get cooking

CALLING all cheese lovers.The Hunter Valley Cheese Company will begin hosting cheesemaking and cheese appreciation classes in April.Master cheesemaker Peter Curtis and cheese specialist Rosalia "Rose" Lambert will break down the mystery of artisan cheesemaking.During the three-hour classes, guests will learn how to prepare and age simple, traditional cheeses at home and understand the regional and seasonal variations of farmhouse cheese.The workshop begins with a cheesemaker's selection of Australian boutique cheeses, fruits, pastes and breads served with small-producer wines from the Hunter.The tutorial will then explore how to understand cheese varieties, cheese selection and recognition, cheese care and a few cheese-specific cooking tips.Guests will make their own fresh cheeses - such as labna - to take home, and will also receive the tasting notes and recipes from the workshop.A cheesemaker's two-course lunch will follow with seasonal Hunter Valley fare, wine, tea and coffee as guests chat further about cheese and cheesemaking with Curtis and Lambert.The first workshop kicks off at noon on Easter Saturday, April 23, at the Hunter Valley Cheese Company based at McGuigans Cellars in Pokolbin.Another will be held on Easter Monday, which this year falls on Anzac Day (April 25).Further workshops will be held in June, September and October.The classes cost $85 or a discounted $75 for Cheese Addiction Club members.To find out more, phone 4998 7744 or visit huntervalleycheese.com.au.
