LEN Evans died more than a year ago but his unique knowledge of wine can still be accessed via a recently released book How To Taste Wine.

Evans based the book on his 50 years of wine experience and authored it as he carefully worked his way through his expansive private cellar. He saw it as his final and definitive book on wine tasting and as giving insights into the world of wine judging.

The book includes graphs that delineate the structure of wine and show how the palate reacts to different wines. There are also colour photographs marking the changing hues of wine as it matures.

It explains how, after considering colour, Evans judged wine in five compartments: nose, entry, middle palate, after palate and finish.

The book sells for $19.95 in book stores and wine outlets.
